Preparation of Kalan1. Cook corm and plantain pieces, along with black pepper powder, turmeric powder, red chilli powder, 1 green chilli, and salt, adding enough water to cover the pieces. Cook till soft. 2. Grind grated coconut, green chilli, and cumin seeds, to fine paste. 3. When the pieces are cooked, and the additional water is evaporated, add ghee and fry the pieces. 4. Add the grinded paste into curry, mix well. Add the curd, keep on mixing till hot (do not boil), remove from heat. 5. In a small pan heat a tablespoon of oil, put some mustard seeds, when they start sputtering, add red chilli, and the curry leaves, fry them, and them pour over the curry. 6. Serve hot rice.
