Fairy Pudding and Custard Sauce

 

Fairy Pudding

ingredients for 4
water 300 ml
sugar 60 gm
lime or 1/2
lemon 1
egg white 1
cornflour 15 gm `

Preparation of Fairy Pudding

1. Boil the water with grated lemon rind and sugar .

2. Blent the corn flower with the lemon juice .

3. Strain sugar solution on to blended cornflour.

4. Return to pan and boil fo r6 to 8 minutes .

5. Whip the white of egg stiffly and fold into the mixture when it has cooled slghtly .

6. Pour into wet moulds and turn when set. 7. Serve with custard sauce .

Custard Sauce

ingredients for 4
egg yolk 1
milk 150 ml
sugar 10 g m
salt a pinch

Preparation of Custard Sauce

1. Beat egg. Add sugar and salt .

2. Pour hot milk over . Stir well.

3. Pour in to a double boiler and cook till thick .
