Lemon Sponge

 

Lemon Sponge

ingredients for 4
gelatine 20 gm
egg whites 2
sugar 60 gm
lime or 1/2
lemon 1
water 150 ml

Preparation of Lemon Sponge

1. Put the rind and juice of lime ,sugar ,gelatine and water into a saucepan . Cover and bring to boil .

2. Infuse for half an hour .

3. Strain and cool . Whisk egg whites stiffly in a large bowl . Add the cool lime mixture slowly ,whisking well.

4. Whisk till it starts to set.

5. Pour in to a wet mould and turn out when set. Serve with custard sauce .
