Ceylon Egg Curry

Ceylon Egg Curry

ingredients for 4
eggs 4
small onions 30 gm
garlic 2 flakes
ginger 5 gm
cinnamon 2.5 cm piece
coriander 5 gm
red chillies 5 gm `
fennel 1/2 tsp
cumin a pinch
fenugreek a few seeds
lime 1/2
coconut 1/2
fat 15 gm
turmeric 1/4 tsp
salt to taste `
curry leaves a sprig

Method

1.Hard -boil eggs ,cool in water .Shell . 2. Prick with a stout pin and smear over with salt and turmeric.3. Grate and extract medium strength coconut milk .4. Slice onions ,chop ginger and garlic .5. Roast cumin and fennel ,and powder .6. Grind together red chillies and coriander .7. Heat fat .Fry eggs and remove .Add half the sliced onions and fry . 8. Add all the ingredients except lime juice and eggs. 9. Boil until gravy is thick ,stirring now and then .10 .Add the eggs and the lime juice ;simmer for a few milutes longer .
