1. Break the eggs into a bowl . Season with pepper and salt .2. Beat
well with a fork or a whisk until yolks and whites are throughly combined
and no streaks of white can be seen . 3. Heat the omlette pan . Wipe
throughly with a clean cloth .4. Add the fat . 5. When fat melts add
eggs mixture ,moving the mixture continuously with a fork until lightly
set . 6. Remove from heat .7. Half-fold the mixture over at right
angles to the handle .8. Gently lift out and serve in th e centre
of a flat silver dish . 9. Neaten shape if necessary and serve immediately
