1. prepare scrambled eggs as per basic recipe.2. Blanch tomatoes
. Cut into halves . Remove seeds .3. Chop roughly . 4. Heat fat .
Saute onions without discolouring .5. Add the tomatoes and season
.6. Simmer over gentle heat till moisture is evaporated .7. Serve
eggs in individual dishes . Place a spoonful of tomato in the centre
of each dish of egg and a little chopped parsley on top of the tomato.
