Fish Birds

ingredients for 4
pomfret or sole 500 gm
salt to taste
pepper a pinch
bacon sliced 30 gm
bread stuffing  
onions 55 gm
celery 55 gm
butter or margarine 30 gm
bread crumbs 150 gm
lime 1
salt to taste
parsley a few sprigs

Method

1. Prepare stuffing . Fry chopped onions and celery till tender butnot brown .2. Combine all ingredients and mix well . If too dry ,add a little milk or stock .3. Clean ,fillet and skin fish .4. Place a small role of stuffing on each piece of fish. 5. Roll fish around stuffing and fasten with toothpicks .6. Place rolls on well -greased baking pans and lay a slice of 30 minutes .8. Take out fastenings . garnish and serve immediately withan egg sauce .
