ingredients for 4
pomfret 500 gm
spinach 455 gm
butter 30 gm
lime a few drops
salt 10 gm
cayenne pepper a pinch
mornay sauce  
refined flour 15 gm
butter 15 gm
cheese 30 gm
fish stock 295 ml
milk 145 ml

Method

1. Wash trim and fillet fish . 2. Place in a buttered dish ,sprinkle with lemon juice and seasoning . SteaM .3. When cooked ,place fish in fire proof dish ;coat with Mornay sauce . Sprinkle with greated cheese . 4. Brown under a grill or in a very hot oven . 5. Garnish with cooked spinach.
