Stuffed Baked Pomfret

ingredients for 4
pomfret 500 gm
lime 1/2
forcemeat stuffing 55 gm
butter or fat 30 gm
pepper a pinch
salt to taste

Method

1. Scale and wash fish .2. Fillet from one side but do not detach . 3. Remove entrails and centre bone .4. Wash throughly .5. Stuff with forcemeat stuffing . Tie . Sprinkle with lime juice and seasoning .6. Melt fat in a baking tray . When hot ,put in the fish . Cook at moderate heat till tender .7. Baste frequently .
