Stuffed Herrings

ingredients quantity
herrings  
oatmeal stuffing  
oatmeal 115 gm
parsely 2 sprigs
onions 15 gm
margarine or butter 60 gm
egg 1
salt and pepper a little

Method

1. Clean and split herrings . Remove the bones by inseting the thumb under the tail end of each herring and lifting carefully . 2. Mix all the stuffing ingredients and place a portion of the mixture carefully in each herring and roll up . 3. Lay side by side on a greased baking dish . Sprinkle with salt ,pepper and oatmeal .4. Cover with greased paper and bake for 30 minutes in a moderately hot oven . 5. Serve with slices of lemon or mustard sauce .
