Baked Coconut Pudding

Baked Coconut Pudding

ingredients for 4
fresh bread crumbs 55 gm
coconut 55 gm
milk 295 ml
granulated sugar 30 gm
castor sugar 30 gm
grated lemon rind a little
margarine 30 ml
eggs 2

Method

1. Heat the milk and margarine together .2. Pour over the breadcrumbs. 3.Add coconut ,lemon rind and granulated sugar. 4. Beat egg yolks and add to mixture .5. Allow to stand for half an hour or longer .6. Put in to a greased pie dish and bake till quite firm at 175 C . 7. Whisk the egg whites firmly . Fold in castor sugar and pile on top of pudding .8. Put in to a cool oven at 93 C for 15 minutes or until the meringue is crisp and pale brown in colour.
