Jamaican Sweet Potato Pudding

Jamaican Sweet Potato Pudding

ingredients quantity
sweet potatoes 500 gm
butter 50 gm
sugar 75 gm
refined flour 25 gm
nutmeg 2
ginger powder a pinch
coconut (grated ) 100 gm
vanilla essence a few sprig
raisins 10 gm
salt a pinch

Method

1. Wash ,peel and grate potatoes .cream butter and sugar.Add grated sweet potatoes . Cream butter and sugar . Add grated sweet potatoes . 2. Sift flour with nutmeg ,ginger and salt . Add to the sweet potato mixture . 3. Extract thick coconut milk from freshly grated coconut and add a little to the mixture . Add vanilla and raisins . 4. Pour the mixture into a greased mould and bake at 190 C for 11/2 hours . Serve hot cold with remaining coconut milk .
