1. joint cicken into pieces after cleaning and washing .2.Grind ginger
,garlic and onions into a paste and mix well with cut chicken adding
turmeric ,salt and oil . 3.Let it steep in this about an hour or more
. 4.settle the pieces well in to a pan and pour over the oil and spices
that you had sleeped it in.5. Cloves ,cinnamon and cardamoms may be
added at this stage .6.Put just a little water -about 1/2 cup-and
cook on a brisk fire until water dries and bottom of pan starts getting
red. Keep turning piecesuntil it gets evenly red all round . 7. Pour
enough water to almost cover chicken . Bring to boil and simmer until
water dries and oil comes up .8. If chicken is still tough add a more
water and simmer on slow fire until ready . l.
