Bhugal Gosht

ingredients for 4
mutton (with bones ) 500 gm
onions 2 big
garlic 8-10 cloves
ginger 2.5 cm pieces
tomatoes 2 medium
coriander powder 2 tsp
` chilli powder 2 tsp
garam masala 1 1/2 tsp
black pepper 1/4 tsp
coriander leaves 1/8 bunch
salt to taste
fat 100 gm

Method

1. Grind garlic and ginger .Grind chopped onions till nearly brown . 2. Add garlic and gigner and mutton . 3. Keep frying for 10-15 minutes ,sprinkling a little water if desired .4. Add coriander powder ,red chilli powder ,cumin powder and salt .5. Fry for a further 10 minutes .6. Add chopped tomatoes and fry for a further 10 minutes .7. Add sufficient water and coriander leaves and simmer over very slow fire .8. When nearly done ,add garam masala and pepper powder .

N.B. This mutton dish must done on an extremely slow fire . Peeled quartered potatoes may be added half-way if desired .
