Duck Roast

Duck Roast

ingredients for 6 to 8
plump duck 1
ginger 2.5 cm
garlic 6 flakes
vinegar 2 tbsp
salt to taste
pepper 1/4 tsp
butter 15 gm
oil 60 ml
onions 115 gm `
tomatoes 225 gm
kashmiri red chillies or red chillies with seeds removed 2
sugar 1/4 tsp

Method

1. Clean duck and keep it whole .2.Grind together ,garlic and pepper . 3. Apply on duck and prick with a fork to let the seep in.4. Marinade in vinegar for half an hour .5.Heat butter and oil in a large thick bottom pan. 6. Add sliced onions ,ground red chillies and chopped tomatoes . Add duck and brown .7. Add two to three cups boiling water and salt . 8. Cook tightly covered till duck is tender .9. Add sugar and remove from fire .

N.B>It can be served with roast or fried potatoes and boled vegetables .
