Liver and Potato Curry

Liver and Potato Curry

ingredients for 4
liver 225 gm
potaoes 200 gm
red chillies 3
coriander 10 gm
cumin a pinch
peppercorns afew
onions 225 gm
green chillies 10 gm
garlic a few flakes
ginger 5 gm
coconut 1/2
fat 15 gm
vinegar 15 ml
curry leaves a sprig
salt to taste

Method

1. Clean ,wash and cut liver into even cubes .2.Roast and grind red chillies ,coriander ,cumin and peppercorns .Peel and slice onions ,garlic and ginger .3.Grate and make three extractions of coconut milk .4. Peel and cut potatoes into small cubes . 5. Cook together liver , third extract of coconut milk and salt for about one hour .6. Add potatoes ,second extract of coconut milk ,vinegar ,sliced onions ,garlic and ginger and ground spices and whole green chillies .7. When potatoes and liver are done ,add thick coconut milk .Bring to boil .Taste for salt and remove .8. Heat fat .Add curry leaves and a few pieces of onion .When they are brown ,pour over curry.Mix well .
