Moghlai Khorma

ingredients for 8-10
mutton 1 kg `
fat 120 gm
sugar and salt to taste
for grinding  
garlic 10 gm
onions 50 gm
ginger 10 gm
red chillies 6-10
cinnamon 2.5 cm piece
cloves 5 gm
small cardamoms 3 gm

Method

1. Cut mutton into big pieces .Wash and drain ,Apply ground spices and set aside .2.Heat 100 gm of fat .Add mutton ,sugar and salt .Cover and cook over a slow fire till all the water that comes out of the meat is dried .3.Add just sufficient water to cover meat .When meat is tender ,add the remaining fat and remove from fire .
