brown sugar

Method

1. Soak ham in cold water for 12 hours. 2. Wipe well and trim .3. Coat with a flour and water paste crust which must be sufficiently thick to keep a flour and water paste crust which must be sufficiently thick to keep the juices in . 4. Place the ham in an oven at 205 C or gas mark 6 for 15 minutes . 5, Reduce heat to 155 C or gas mark 2 and cook till done . 6. Remove the crust and skin . Score squares in the fat and place a clove in each square sprinkling brown sugar over the fat . Decorate the knuckle with paper frill.
