ingredients for 4
mutton leg 500 gm
tomato sauce 470 ml
refined flour 15 gm
butter 15 gm
onions 15 gm
potatoes 450 gm
parsley 1/4 bunch
mint a sprig
pepper to taste
salt 10 gm
stock 590 ml

Method

1. Clean and roast leg of mutton ,cool and carve into thin slices .2. boil potatoes and mash .3. Prepare a brown sauce with flour ,buttter , onions and stock .4. Chop mint and parsley fine . 5. Dredge meat with pepper ,salt and chopped parsley and mint .6. Arrange slices of meat overlapping in a greased pyrex dish . 7. Pipe a border of mashed potatoes all around .8. pour the sauces mixed together over the meat .9. Bake in a fairly quick oven and dust the top of the sauce with chopped mint before serving .
