Roast Heart

ingredients for 4
sheep's heart 4
dripping 55 gm
forcemeat stuffing  
fresh breadcrumbs 30 gm
butter or margarine 15 gm
grated lime rind a pinch
parsley few sprigs
mixed herbs a pinch
pepper to taste
salt to taste
egg for binding or 1/2
milk 10 ml

Method

1. Clean hearts well . Remove tubes .2.make forcemeat stuffing .3. Fill up the hearts and sew or skewer openings .4. Bake at 190 C covered with greased paper ,basting frequently .5. Serve with thickened gravy.
