Roast Lamp or MuttonAllow approximately 170 gm of meat on the bone (legs ,shoulder ,saddle or loin and breast ) 1. Season the joints with salt and pepper .2. Place on a trivet in a roasting tray .3. Place a little fat on top and cook at 205 C for 100 minutes.4. Reduce heat to 190 C . Baste frequently and reduce the heat gradually to 175 C Test to see if cooked . The joints should be cooked through allow stand for approximately half an hour before carving .
