1. Melt 30 gm of butter . Add flour and cook without discolouring
.2. Remove pan from fire . Add stock gradually ,stirring well to prevernt
formation of lumbs .3. Season with pepper ,salt and nutmeg . 4. Simmer
for half an hour . 5. Beat egg yolks. Add cream .6. Add a little of
the hot stock gradually and mix well . Whisk in butter .7. Add to
sauce . Heat without boiling .8. Add lime juice . Remove and pass
through a tammy cloth .
