1. Mix together shallots ,peppercorns and vinegar .2. Reduce completely
.3. Add 1 tbsp cold water . Allow to cool .4. mix in egg yolks with
whiisk . 5. Return to gentle heat and whisking continuously ,cook
till it becomes like cream .6. Remove from heat and cool slightly
.7. Whisk in the melted warm butter until throughly combined .8. Add
seasoning to taste .9. Pass through a tammy cloth .10. Serve warm
with grilled meat and fish .
