Method1.Heat liquid . Remove and keep warm .2. Prepare vegetables and slice them.3. Melt the fat and fry the vegetables until brown . 4. Add the flour . Cook slowly together until roux becomes a good brown colour .5. Remove from heat and add the liquid ,a little at a time ,mixing smoothly with the roux.6. Allow to simmer for about 30 minutes .7. Skim , strain and reheat .
