1. Melt the butter in a small pan .2. Add chopped shallots and cook
gently for 2 to3 minutes without discolouring .3. Add mushrooms .
Cover with a lid and cook gently for 2 to 3 minutes.4. Strain off
the fat .5. Add wine and reduce to half. 6. Add tomatoes .7. Add demiglace.
Simmer for 5 to 10 minutes .8. Check for seasoning and add tarragon
and parsley .9. Serve with fried steaks ,chops,chicken ,etc..,e.g.
