Chateaubriand Sauce

Chateaubriand Sauce

serve with grilled fillets of beef

ingredients quantity
shallots 30 gm `
thyme 1 sprig
bayleaf 1
mushrooms 30 gm
meat gravy 300 ml
butter 115 gm `
lime juice 1/2 lime
parsley 1/4 bunch

Method

1. Prepare parsley butter with butter ,parsley and lime. 2. Put all the remaining ingredients into a stew pan and cook to reduce to half the quantity .3. Strain through muslin ,add the prepared parsley butter.Serve hot with Chareaubrind or grilled fillet of beef.
