Chateaubriand Sauce

Serve with fried or grilled steaks, fillets of beef.

ingredients quantity
jus lie 600 ml
maitre d'hotel butter 225 gm
thyme 1 sprig
bayleaf 1
shallots (chopped) 60 gm
mushroom trimmings 60 gm
white wine 300 ml

Method

1. Put shallots ,thyme ,mushroom trimmings ,bayleaf and wine into a pan and reduce to one-third .2. Add the jus lie and reduce to half again. 3.. Strain through a muslin cloth .4.Finish away from heat ,with maitre d'hotel butter .
