Cucumber Sauce

Cucumber Sauce

Serve with boiled or poached fish and white entrees

ingredients quantity
cucumber 55 gm
spinach 1 tbsp
seasoning  
butter 30 gm
white sauce 150 ml
cream 75 ml

Method

1.Peel cucumber and cut into 2.5 cm slices . Soak in cold water .2. Drain and saute in 15 gm of butter with the lid on .3. Pound well with spinach . Pass through a hair sieve .4. Reheat along with the sauce . Add cream and seasoning .
