Devilled Sauce

Devilled Sauce

Serve with grilled or fried fish and meats

ingredients quantity
shallots or onion (chopped) 55 gm
mignonette pepper 10 gm
white wine 30 ml
vinegar 40 ml
cayenne pepper a large pinch
demiglace 300 ml

Method

1. Mix together the chopped onion ,mignonette pepper ,wine and vinegar. 2. Reduce by half. 3. Add the demiglace .4.Simmer 5 to 10 minutes .5. Season linerally with cayenne pepper .6. Pass through a fine muslin .7. Serve with grilled or fish or meats.
