Method1. Mix together the chopped onion ,mignonette pepper ,wine and vinegar. 2. Reduce by half. 3. Add the demiglace .4.Simmer 5 to 10 minutes .5. Season linerally with cayenne pepper .6. Pass through a fine muslin .7. Serve with grilled or fish or meats.
