1. Heat milk . Set aside but keep hot .2. Melt fat . Stir in flour
.2. Add seasoning .3. Stir over heat without discolouring for a few
minutes .4. Remove from heat and stir in milk gradually .5. Cook carefully,stirring
all the time till it thickens . Boil for 2 minutes .6. Cool slightly
and add egg yolks and lemon juice .7. Reheat but do not boil .
