ingredients quantity
raw rice 910 gm
eggs 4
coconut 2
salt to taste
refined coconut oil 1 kg

Method

1. Soak rice in water for 2 to 3 hours . 2. Drain well and powder . Seive through a fine seive .3. Roast rice flour . Extract coconut milk .4. Mix together rice flour ,beaten eggs, coconut milk and salt to make a fairly stiff dough .5. Make into small balls . Press between two barks of the banana tree ,to form an impression or mark with a claen comb .6. Heat oil and deep fry .

N.B The fleshy bark of the banana tree is cut in to a piece ,7.5 cm broad and 25 cm long . The thin inner membrane is removed before the bark i used to make the impression .
