ingredients quantity
pastry  
refined flour 115 gm
egg yolk 1
fat 15 gm
thick coconut milk 40 m l
salt to taste
fat or oil to fry
filling  
prawns 500 gm
billing or green tomatoes 225 gm
small onions 30 gm
red chillies 5 gm
turmeric a pinch
curry leaves a small sprig
lemon grass a small sprig
powdered cloves and cinnamon a pinch
coconut milk 200 ml
salt to taste
fat 15 gm

Method

1. Shell prawns . Remove intestines by sitting the back . Wash well in several lots of cold water . Drain and cut in to small pieces . 2. slice billings or green tomatoes and onions .3. Grind red chillies .4.Heat fat . Fry a quarter of the sliced onions ,curry leaves and lemon grass.5. Add minced prawns ,the sliced billings or tomatoes ,the remainder of the onions ,the ground red chillies ,turmeric ,powdered cinnamon and cloves and salt .6. Let it simmer fo rabout 10 minutes . Then add the coconut milk and boil until gravy is absorbed . Test for seasoning .7. Remove from fire . Take out the leaves and use as filling .
