ingredients quantity
raw rice 910 gm
coconut 1
small onions 225 gm
cumin 2 tsp
garlic 50 gm
salt to taste
refined coconut oil to fry 1 kg

Method

1. Soak rice in water for 2 to 3 hours .2. Drain well and powder . Seive through a fine seive .3. Grind together onions, cumin,garlic and salt .4. Extract coconut milk . Add ground ingredients.5. Roast rice flour . When still hot ,add coconut milk mixture to form a finely stiff dough .6. Divide into small balls. Roll out into 7.5 cm diameter rounds .7. Shape round a bamboo stick of 1.25 -2 cm diameter or around fingers to form tubes .8. Fry in hot oil till crisp .9. Drain well on absorbent paper. Cool and put into airtight tins.
