Consomme Royale

ingredients for 4
good mutton stock 885 gm
for clacrification  
minced mutton (lean) 115 gm
egg white 1
egg yolk 1
carrots 55 gm
celery 30 gm
peppercorns a few
onions 10 gm
cloves 2 gm
salt 10 gm
vinegar 10 ml
royale garnish  
egg yolk 1
milk or stock 15 ml
seasoning  

Method

1. Cool stock well and strain .2. Chop the vegetables and mix with minced meat and eggs. 3. Add ,mixture to stock and whisk throughly .4. Add vinegar ,spices and onions to the stock .5. Keep on a slow fire and bring to boil whisking all the time .6. When it starts boiling stop whisking throughly .4. Add vinegar ,spices and onions to the stock .5. Keep on slow fire bring to boil whisking all the time .6. when it starts boiling stop whisking and allow to simmer for one hour .7. Strain through a muslin twice if necessary . 8. Reheat and garnish with cubes of royal .9. For garnish ,beat yolk ,add stock and seasoning and stem in small greased moulds.
