Mulligatawny Soup

Mulligatawny Soup

ingredients for 4
mutton 200 gm
stock 885 ml
coconut 1
lime 1
curry leaves 1 sprig
oil 15 ml
tomatoes 200 gm
garlic a few flakes
onions 15 gm
ginger 5 gm
cinnamon a small piece
coriander 10 gm
cumin 10 gm
fennel 10 gm
turmeric a pinch
fenugreek a pinch
boiled rice 55 gm
salt to taste

Method

1. Clean and cut the mutton into small pieces . 2. Add stock and let it simmer till meat is tender .3. Roast and powder coriander ,fennel ,and cumin and add along with turmeric ,fenugreek ,half the onions ,garlic ,ginger ,cinnamon ,curry leaves ,tomatoes and salt . Simmer till tomatoes are well cooked .4. Strain stock ,return best pieces of mutton to stock .5. Extract thick coconut milk from coconut . Add to stock .6. Heat fat in a pan . Add remaining sliced onions and fry till crisp .7. Add soup ,lime juice and more salt if necessary . Bring to boil ,remove and serve hot garnished with boiled rice .
