Pumpkin Soup

ingredients for 4
pumpkin 455 gm
vegetable stock 590 ml
milk 300 ml
butter 15 gm
salt to taste
pepper a pinch
parsley a few sprigs
bread 115 gm
fat to fry bread 15 gm

Method

1.Peel pumpkin . Remove seeds and the stringy part ,cut in to small cubes .2. Add just enough water to cook . Boil till tender .3. Peas pumpkin through a sieve .4. Return to a pan with the butter ,milk and stock .5. Season . Bring to boil and serve hot ,with fried crutons and garnished with parsley .
