1. Clean and cut vegetables in to small pieces . Roast and powder
coriander ,cumin and fennel . 2. Add vegetables , stock ,coriander,
fennel and cumin powders ,turmeric ,fenugreek ,half the onions ,garlic
,cinnamon , curry leaves ,tomatoes and salt . Simmer till vegetables
are tender . 3. Strain and pass vegetables through a sieve .,saving
a few pieces of the garnish . 4. Extract thick coconut milk from the
coconut and add to the soup . 5. Heat fat in a pan . Add remaining
sliced onions and fry till crisp .6. Add soup lime juice and more
salt if necessary . Remove and serve hot garnished with boiled rice
and pieces of vegetables .
