ingredients quantity
raw rice 910 gm
eggs 4
coconut 1
sugar 450 gm
salt 1 tsp
coconut oil 1 litre
coconut oil to fry about 50 gm

Method

1,. Wash and soak rice for 2 to 3 hours .2. Drain well powder . Pass through a fine sieve .3. Extract coconut milk from grated coconut .4. Mix together rice flour ,beaten egg ,sugar ,salt and coconut milk to prepare a medium batter .5. Heat oil . Heat mould in oil . 6. Dip mould in batter and strainght away into hot fat . As koekjes form they will separate from mould . When golden brown drain on absorbent paper, cool and put into airtight tins .
