1. Mix the flour and sugar together .2. Add the egg yolks and then
the coconut milk by degrees to obtain the consistency of a thick pancake
batter .3. Add cinnamon ,cloves and salt . Mix well together . 4.
Set aside for half an hour .5. Beat the egg whites and mix in well
with the butter .6. Heat ijzer mould . Rub over witha little butter
or ghee . Pour a dessertspoonful of the batter on to one side of the
mould . Close and place over a hot fire .7. When koekje is browned
on one side ,turn ijzer and cook second side .8. As soon as koekje
is taken out roll round a pencil .9. As it cools it will slip off.
Put into an air -light tin straight away .
