Alu Palak

INGREDIENTS FOR 4 FOR 100
spinach 225gm 5.6kg
fenugreek leaves 1/4 bunch 6bunches
potatoes 225gm 5.6 kg
ginger 10gm 225gm
garlic a few flakes 30gm
green chillies 5gm 115gm
chilli powder 5gm 115gm
coriander leaves a few 30gm
fat 30gm 500gm
salt 10gm 100gm

Method

1.peel and cut potatoes into quarters .2. Heat fat and fry potatoes . Remove . 3. Grind together chilli powder , garlic and ginger . 4. Fry masala and all green chillies .5. Add washed and chopped spinach and fenugreek leaves .6. Saute . Add potatoes and salt and cook covered on a slow fire till potatoes are tender and the leaves are marshed up . Garnish with coriander leaves .

N.B.sprinkle a little water if required .
