ingredients for 4 for 100
potatoes 225 gm 5.6 kg
red chillies 5-8 gm 80-100
fenugreek 1/2 tsp 15 gm
mustard seeds 1 tsp 15 gm
tamarind 5 gm 115 gm
asafoetida a pinch 15 gm
oil 50 ml 1.25 litre
salt to tast 80-100 gm

Method

1. Wash potatoes thoroughly .2. Peel and cut in to stripes 1.25 cm. (1/2'') in length . 3. After squeezing out all water , apply salt and set aside for 10 minutes . 4 . Fry the potato pieces in oil till golden and set aside . 5. Roast red chilliies , fenu greek , mustard and asafoetida in a little oil. 6. Grind along with tamarind to a fine , thick paste . 7. Mix ground spices to fried potatoes and serve immediately so that potatoes remain crisp .
