Batata Sukhe

ingredients for 4 for 100
potatoes 450 gm 11 kg
grated coconut 1/2 10
coconut oil 15 ml 250 ml
red chillies 5 gm 115 gm
turmeric 1/2 tsp 10 gm
coriander seeds 10 gm 250 gm
fenu greek 1/4 tsp 5 gm
split black gram 1 tsp 30 gm
onions 85 gm 2 kg
tamarind 10 gm 250 gm
salt to taste 80-100 gm

Method

1. Wash , boil , peel and cut potatoes into small cubes . 2. Roast coriander seeds , fenugreek ,split black gram and red chillies . 3. Grind coconut and turmeric along with roasted spices .4. Heat half the oil. Fry potatoes ,add ground spices ,tamarind pulp and salt and cook on a slow fire till the spices are cooked and gravy is thick . Remove from fire . 5. Heat remaining oil . Add finely chopped onions . When fried ,pour over potatoes .
