Brinjal and Potato Curry

Brinjal and Potato Curry

ingredients for 4 for 100
brinjals 450 gm 11 kg
potatoes 225 gm 5.6 kg
tomatoes 225 gm 5.6 kg
Spring onions 115 gm 2.8 kg
turmeric 1/2 tsp 30 gm
chilli powder 1/2 tsp 30 gm
sweet oil 100 ml 2.5 litre
salt to taste 80-100 gm

Method

1. Wash cut brinjals into quarters .2. Chop tomatoes and onions . 3. Peel and cut potatoes into cubes . 4. Heat oil . Fry brinjals . 5 . Add turmeric ,chilli powder ,remaining vegetables and salt . 6. Cook on a very slow fire , covered ,till all vegetables are well cooked . 7. Stir occasionally to see that the curry does not burn .
