Brinjal Bhurta

ingredients for 4 for 100
brinjals 225 gm 5.6 kg
onions 115 gm 2.8 kg
green chillies 5 gm 115 gm
turmeric a pinch 10 gm
chilli powder a pinch 10 gm
cumin powder a pinch 10 gm
garlic 2 flakes 15 gm
oil 10 ml 200 ml
salt ` 10 gm 200 gm
coriander leaves a few sprigs 1 bunch

Method

1.Roast brinjals in hot ash or on hot tava or griddle . 2. Remove skin and mash . 3. Slice a small portion of the onions ; chop remaining onions fine . 4Chop green chillies ,and garlic . 5. Heat fat and fry sliced onions . Add mashed brinjals ., turmeric , cumin powder ,chilli powder ,salt and garlic.Cook for a few minutes . 6. Remove from fire ,and chopped onion ,green chillies and coriander leaves . Mix well .

N.B. Curds can be used for this bhurta.
