ingredients for 4 for 100
brinjals 225 gm 5.6 kg
Mustard seeds 1/2 tsp 55 gm
red chillies 5 gm 115 gm
curry leaves 1 spring 85 gm
ginger 5 gm 115 gm
cumin 1 tsp 55 gm
vinegar 50 ml 1 litre
cinnamon a small piece 55 gm
coriander 5 gm 115 gm
sugar a pinch 55 gm
Onions 10 gm 225 gm
garlic a few flakes 70 gm
green chillies 5 gm 115 gm
tamarind 10 gm 225 gm
coconut 1 10
oil 30 ml 500 ml
turmeric 5 gm 45 gm
salt 15 gm 100 gm

Method

1. Slice the brinjals lengthwise and rub over with turmeric and salt. 2. Grind together red chillies ,mustard seeds ,cinnamon,cumin,and coriander .3. Soak tamarind in salted water .4. slice garlic ,ginger ,green chillies and onion . 5. Heat oil;fry brinjals and remove .6. Mix together the brinjals ,ground spices ,vinegar ,tamarind , and curry leaves .7. To hot oil add the brinjal mixture and coconut milk. 8. Simmer for 15 minutes ,stirring all the time . The brinjals must be well cooked and mashed up . 9. Add the sugar just before removing from the fire .
