Cauliflowerbhujjia

ingredients for 4 for 100
cauliflower 450 gm 11 kg
curds 1 tbsp 340 ml
fat 15 gm 340 gm
turmeric 1/4 tsp 15 gm
salt to taste 80 gm
chilli powder 1 tsp 85 gm
cumin a pinch 15 gm
mustard seeds a pinch 15 gm
asafoetida a pinch 10 gm

Method

1. Cut cauliflower into flowerettes. 2. Heat fat .Add mustard seeds and cumin . 3. When mustard seeds and cumin crackle ,add cauliflower ,chilli powder ,turmeric and salt . 4. Cook covered on a very slow fire 5. When cauliflower is cooked add beaten curds . Mix well and remove.

N.B. Asafoetida may be fried with mustard and cumin if desired .
