ingredients for 4 for 100
split black gram 225 gm 5.6 kg
fat to fry 30 gm 500 gm
green chillies 10 gm 200 gm
onions 55 gm 1.35 kg
soda bicarbonate a pinch 10 gm
curds 1.5 litre 35 litre
chilli powder 2 gm 50 gm
cumin powder a pinch 20 gm
salt 5-10 gm 100 gm
coriander leaves a few 1 bunch

Method

1. Soak gram for 12 hours 2. Grind well and add salt ,chopped green chillies ,onion and soda . Beat well to enclose air .3. Make it into round flat cakes 5 cm . in diameter and 1.25 cm . thick and fry in deep hot fat. 4. Soak fried bhallas in salted hot water for 15 minutes immediately after removing from fry pan . 5. Squeeze out water gently by pressing bhallas in between the palms of both hands . 6. Put in to curds beaten up with salt ,chilli powder and cumin powder . Garnish with coriander leaves .
