Doohi Kofta Curry

ingredients for 4 for 100
bottle gourd 225 gm 5.6 kg
onions 30 gm 750 gm
bengal gram flour 30 gm 750 gm
green chillies 2 to 3 75 gm
ginger 5 gm 115 gm
coriander leaves 1/4 bunch 6 bunches
oil to fry koftas and for gravy 50 ml 1 litre
gravy    
tomatoes 200 gm 5 kg
onions 100 gm 2.5 kg
red chilli powder 5 gm 115 g
turmeric a pinch 20 gm
coriander powder 10 gm 250 gm
cumin a pinch 20 gm
garam masala a pinch 20 gm `
salt to taste 100 gm

Method

1. Peel and grate bottle gourd . Remove excess moisture by squeezing . 2. Chop fine the green chillies ,ginger , coriander leaves and onion . 3. Mix with grated gourd ,gram flour and salt . Form in to even sized balls. 4. Heat oil . Deep fry kofta and set aside .

To prepare gravy

5. Grind spices to a fine paste . Slice onions . Chop tomatoes . 6. Heat oil . Add sliced onions and fry well . Add ground spices and fry till oil separates from spices . 7. Add chopped tomatoes ,salt , liquid from the grated gourd and water . Bring to boil .8. Simmer till gravy is thick . Add fried koftas . 9. Bring to boil . Check for seasoning and remove . Serve hot.
