ingredients for 4 for 100
Bottle gourd 450 gm 11 kg
onions 115 gm 1.36 kg
ginger 5 gm 115 gm
green chillies 5 gm 115 gm
curds 225 gm 5.65 kg
salt 10 gm 100 gm
For tempering    
Mustard seeds a pinch 10 gm
curry leaves 1 spring 1 bunch
onions 5 gm 115 gm
red chilli 1 10
oil 15 ml 250 gm

Method

1. Wash ,peel and dice the gourd .2. Chop ginger ,slit green chillies and slice onions . 3. Cook all ingredients with just enough water to cook the vegetable. 4. Remove from fire ,add beaten curds and salt . 5. Heat oil . Add mustard seeds ,curry leaves ,sliced onion and whole red chillies . When seeds crackle ,pour over gourd and curds mixture . Mix well .
